The Balmoral offers 188 opulent suites and stylish rooms with views towards Edinburgh Castle, the Old Town, or the hotel's internal courtyard. All the bedrooms were fully refurbished in the hotel's £7 million refurbishment programme in 2004; this also included The Balmoral's signature conference and banqueting suite, the Sir Walter Scott Suite, as well as seven further conference and banqueting suites, Hadrian's Brasserie, number one restaurant and the hotel lobby.

When it comes to fine-dining, the choice of restaurants at The Balmoral matches the mood of the moment. With attentive but non-intrusive service, guests can choose from the hotel's Michelin-starred number one restaurant with outstanding cuisine provided by Chef Jeff Bland; Hadrian's for chic and informal dining; Palm Court for cocktails or traditional afternoon tea and the stylish Balmoral Bar for a relaxing drink.

For the ultimate in relaxation, the Balmoral Spa is an exclusive retreat in the heart of the city. Voted 'Scotland's Top Urban Day Spa' in Condé Nast Traveller's 2008 Readers' Spa Awards, it offers five treatment rooms, a swimming pool, sauna, steam room, gymnasium and exercise studio.

number one is currently the only hotel restaurant in Edinburgh to have gained a Michelin Star, first awarded in January 2003, which it has retained to this day, a fine tribute to Chef Bland and his brigade.

Using only the finest Scottish ingredients, Bland creates outstanding à la carte dishes using favourites such as Scottish beef, roasted venison, seared scallops and the finest Scottish salmon. It is easy to see why number one was given the Fine Dining Experience Award at the inaugural Scottish Restaurant Awards 2008, when the panel delivered their verdict that number one restaurant offers its customers "the ultimate sophisticated dining experience".

With that sort of accolade it might seem slightly superfluous to proceed any further, but a little detail might not come amiss. The success of number one revolves round the wonderful dishes on offer on the à la carte, with a Chef's tasting menu that is recommended for the whole table.

Hadrian's, has essentially a brasserie style with an informal and buzzy atmosphere. Its stylish interior has a distinct 1930s art deco influence, with walnut floors and a palette of lime plus a splash of African violet.

The combination of colours was inspired by the natural landscapes of Edinburgh, taking the Salisbury Crags, sea and sky as influences. While the décor has been given a facelift to underline this venture, fortunately the food certainly reflects it as well. Designed by Chef Jeff Bland it offers a cosmopolitan menu with a mix of Scottish dishes and innovative European cuisine.
